If only I sliced all my apples this fancy…

Ingredients
- 4 apples, peeled, cored, and sliced 1/4 inch thick
- 5 Tablespoons of butter
- 1/2 cup, plus 1 tablespoon of raw honey (This is important. Always check the ingredients on the bottle of honey. Sometimes it isn’t actually honey.)
- 1/4 teaspoon of cinnamon (can increase of 1/2 teaspoon if you really like cinnamon)
- 6 eggs
- 1 1/2 cups almond flour
- 1 cup tapioca starch, and a little extra for greasing the pan
- 1/4 cup coconut flour
- 3/4 teaspoons of baking soda
- 1/4 teaspoon of slat
- 1 teaspoon of put vanilla extract
Directions
- Preheat the oven to 350 degrees. Grease and flour a 9-inch springform pan with avocado oil spray and tapioca starch.
- Melt the 1 tablespoon of butter in a large pan on high heat. Add the apples, 1 tablespoon of raw honey, and cinnamon. Cook for 4-5 minutes, stirring often until the apples start to soften and brown. Remove from pan and set aside.
- Use the same pan and melt the remaining butter. Add the honey. Move to a large bowl and add the eggs. Whisk the melted butter, honey, vanilla extract, and eggs together.
- Add the almond flour, tapioca starch, coconut flour, baking soda, and salt and whisk to combine.
- Pour half of the cake batter into the springform pan. In a single layer on top of the batter, arrange half of the apple slices. Pour the remaining batter on top of the apples.
- Bake for 30-35 minutes. Check if it’s done by sticking a toothpick or knife in the center. If it comes out clean, pull out of the oven and cool on a cooling rack.
- Once it’s cool, remove from the pan and slice. Store leftovers in the fridge.
