Figgy Piggy

With finding out the Bugs had a bar of gold, this is a subtle tribute to the White Sow and where the Bugs’ gold is stashed. Book readers, IYKYK….

Ingredients

  • 8 slices of bread of your choice (the crustier, the better in my opinion)
  • 8 slices of provolone cheese (a white cheddar or smoked gouda would be fabulous too)
  • 2 ounces bleu cheese
  • 1/4 cup dried figs
  • 1/4 cup water
  • 1 TBSP sugar, optional
  • 8 slices thick-cut bacon, cooked
  • 4 tablespoons of butter

Instructions

  1. Turn oven to 400°. Place parchment paper on an 11×17 pan. Place bacon on the pan and cook in oven until desired level of crispy.
  2. Add the figs to the water and microwave for 2-3 minutes.
  3. Remove the figs and place in a small food processor. Add 2 TBSP of water to make a spreadable puree. Add the sugar if you want sweeter. Go without for a more savory result.
  4. Spread butter on one side of the bread slices.
  5. On the other side, spread the fig puree on 4 slices and bleu cheese on the other 4 slices.
  6. Add sliced cheese to the fig puree side and bacon to the bleu cheese side.
  7. Close sandwiches and cook!

Options for cooking:

  • I like to put my grilled cheese on parchment paper in a pan and cook in the oven at 400° until cheese is melted and bread crispy.
  • A panini press with thicker bread would be amazing!
  • Pour the leftover bacon grease into a cast iron pan and cook your sandwiches there.
  • Skip the homemade fig puree and use 1/4 cup store-bought fig jam or fig butter.
  • Add a little spinach or arugula. After all, Claire is always making Jamie eat his greens.
