Bacon-Wrapped Mini-Meatloafs of Hope

Because everyone needs hope in the form of bacon…

Ingredients:

  • 12 strips of thinly sliced bacon
  • 1 teaspoon of olive oil
  • 1/2 cup of finely chopped carrot
  • 1 cup of finely copped onion
  • 1 teaspoon dried oregano
  • 2 teaspoons of minced garlic
  • 1 cup of ketchup
  • 1 or 1.5 lbs of ground beef
  • 1 cups of ground pork rinds (breadcrumbs or almond flour works too)
  • 2 tablespoons of mustard
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon freshly ground black pepper
  • 2 large eggs
  • cooking spray

Directions:

  1. Heat oven to 350 degrees.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion, chopped carrot, dried oregano, and minced garlic. Saute and then cool.
  3. Combine the veggie mixture, ground pork rinds (or alternatives), 1/2 the ketchup, ground beef, mustard, Worcestershire sauce, black pepper, and eggs in a large bowl.
  4. Cut bacon to line the muffin tin sides and bottom (can use silicone or metal muffin tins). Fill cups with the meat mixture. Top muffins with remaining ketchup. Sprinkle muffins slightly with dried basil or oregano.
  5. Bake for 25-30 minutes. Let cool 5 minutes before serving or muffins will crumble
