Ingredients:
- 6 slices of stale bread (or 4-5 cups of broken bread pieces)
- 3 TBSP of butter
- 4 eggs
- 2 cups of milk
- 3/4 cups sugar (I use coconut sugar.)
- 1 tsp vanilla extract
- 1 tsp cinnamon
Directions:
- Preheat oven to 350 degrees. Use 1 TBSP of butter to coat an 8-inch square baking dish.
- Tear bread into pieces (not crumbs though) and place in buttered baking dish.
- Melt your remaining 2 TBSP of butter and drizzle over the bread pieces.
- In a bowl, whisk the remaining ingredients.
- Pour the mixture over the bread and make sure to evenly coat the bread pieces.
- Bake for 45 minutes, or until the top of the bread pudding bounces back after lightly tapping it/
Optional Sauce:
- In a small saucepan, melt 3 TBSP of salted butter.
- Let the butter brown before adding 1 TBSP of brown sugar and 1 or 2 TBSP of heavy whipping cream.
- Whisk to combine and simmer for 1-2 minutes. Remove from the burner and whisk in 1 tsp of vanilla extract.
- Spread over the bread pudding before serving.
