Bread Pudding for Artemis

Ingredients:

  • 6 slices of stale bread (or 4-5 cups of broken bread pieces)
  • 3 TBSP of butter
  • 4 eggs
  • 2 cups of milk
  • 3/4 cups sugar (I use coconut sugar.)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 350 degrees. Use 1 TBSP of butter to coat an 8-inch square baking dish.
  2. Tear bread into pieces (not crumbs though) and place in buttered baking dish.
  3. Melt your remaining 2 TBSP of butter and drizzle over the bread pieces.
  4. In a bowl, whisk the remaining ingredients.
  5. Pour the mixture over the bread and make sure to evenly coat the bread pieces.
  6. Bake for 45 minutes, or until the top of the bread pudding bounces back after lightly tapping it/

Optional Sauce:

  1. In a small saucepan, melt 3 TBSP of salted butter.
  2. Let the butter brown before adding 1 TBSP of brown sugar and 1 or 2 TBSP of heavy whipping cream.
  3. Whisk to combine and simmer for 1-2 minutes. Remove from the burner and whisk in 1 tsp of vanilla extract.
  4. Spread over the bread pudding before serving.
