Brownie Pudding

I’m guessing pudding might become a theme here. This is a tried and true recipe from Better Homes & Gardens. It’s easy to make and a favorite every time.

Ingredients:

  • 1 cup of all-purpose flour
  • 3/4 cup granulated sugar (I’ve substituted with coconut sugar.)
  • 2 TBSP unsweetened cocoa powder
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup of milk
  • 2 TBSP cooking oil
  • 1 tsp vanilla extract
  • 3/4 cup packed brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups of boiling water
  • vanilla ice cream or whipping cream for serving.

Directions

  1. Heat oven to 350 degrees. Grease (or line with parchment paper) an 8×8 inch baking pan.
  2. In a medium bowl, stir together the flour, granulated sugar. 2 TBSP of cocoa powder, baking powder, and salt. Then stir in the milk, oil, and vanilla.
  3. Pour batter into prepared baking pan. In a small bowl, stir together the brown sugar and 1/4 cup cocoa powder. Stir in the boiling water and slowly pour brown sugar mixture over the batter.
  4. Bake in the preheated oven for 40 minutes. Transfer to a wire rack and cool for 45-60 minutes.
  5. Serve warm. Spoon cake into dessert bowls. Spoon pudding from the bottom of the pan over the cake. Serve with vanilla ice cream or heavy whipping cream.
