
While I understand where both Jamie and Claire are coming from on this argument, I feel like telling them both to stop their blethering. Sometimes, you just need a good meal to think clearly. My husband’s comfort food when he gets tough news is either pizza or country fried steak. While most people used flour to coat their fried steak in, I use pork rinds. I started using them when my husband went on keto, and I ended up liking it better.
Ingredients
- 6 cube steaks
- 2 tsp sea salt
- 1/2 tsp ground black pepper
- 1/2 cup of oil (I’ve done unsalted butter, avocado oil, olive oil, and coconut oil)
- 6 oz pork dust or ground pork grinds
- 2 tsp dried parsley
- 2 tsp ground sage
- 1 tsp dried oregano
- 1 tsp dried rosemary
- 1 tsp dried thyme leaves
- 2-3 eggs
- fresh parsley chopped (optional)
Directions:
- Sprinkle the meat with salt and pepper.
- Pour 1/4 cup of oil into a large frying pan and set over medium heat. While the oil is heating, prepare the coating.
- Mix the pork rinds, parsley, sage, oregano, rosemary, and thyme leaves.
- Crack the eggs in a bowl and beat them.
- Dip a cubesteak into the eggs, and then cover in the herb coating.
- Transfer the steaks to a heated pan and fry for 5-6 minutes on each side.
- Sprinkle the four chops with fresh parsley.
- Optional, serve with gravy or ketchup.
