Old Bay Chicken

Ah Old Bay….deliciousness in a can. I can life without many things in life. And living in a camper for a month proved that. But I can’t live without Old Bay Seasoning.

Ingredients

  • 1/4 cup olive oil
  • 2 TBSP of lemon juice*
  • 2 tsp of Old Bay Seasoning
  • 1 tsp of dried parsley
  • 1/4 tsp of black pepper
  • 1 pound of boneless chicken breasts**

Directions

  1. Mix the first 5 ingredients in a resealable plastic bag.
  2. Add the chicken to the bag.
  3. Marinate in the fridge for at least 30 minutes. (Longer is fine too.)
  4. Grill the chicken over medium-high heat 6 to 7 minutes per side or until chicken is cooked through turning frequently. Feel free to discard the marinade or use it to baste the chicken.

Note: If I can’t grill, I cook it in a 9×13 pan in the oven at 375° for 35 minutes. I usually put the remaining marinade in the pan with the chicken to keep it moist.

*I have it written down as lemon juice but McCormick’s website version uses apple cider vinegar. (Maybe since Claire & Jamie are all about apples?) Lime juice also works great.

**This also works great with fish too! I don’t know about snake….
